MAZE MELBOURNE BY GORDON RAMSAY
Two of my favourite dishes from the tasting menu last night at Maze: Applewood smoked kingfish with fennel purée and pickled celery. I love the use of fairy floss sprinkled with five-spice! Maze “lamington” with rosella jam. Everything was perfect in this dish, ‘up’ to the perfect crispy tuile.
