Spring greens with asparagus foam. Unusual, but yet simple.

A very theatrical presentation this one is — smoked trout broth, crackling, basil seeds, fresh smoke. Exciting.

John dory in brown butter, white asparagus, mojama, baby squid. Far beyond expectations.

Wagyu beef in ash, abalone, tamarind, egg yolk. Exquisite.

Slow cooked free range pork, confit turnips, housemade black pudding, apple. Very flavoursome.

Terroir. Amazing.

Flavours and textures of almond. Heavenly.

In front of me is the sauternes custard with peach and passionfruit. Bravo.
The service was attentive but not overwhelming and the ambience was pleasant. Our gastronomical journey took nearly four hours to complete. Will I ever go back again? Hell yeah.
