BUTTERY GOODNESS

RECIPE
Ingredients
- 125g butter (I prefer to use Lurpak or Golden Churn butter)
- 60g castor sugar
- 1 egg yolk
- 1 t vanilla essence
- 150g plain flour, sifted
- 1/2 t baking powder, sifted
Method
Preheat oven to 180ºC and place rack in center of oven. Line two baking trays with parchment paper. This will ensure that the oven is at the right temperature when the dough’s ready.
Place the butter out on the counter for at least an hour, or until it becomes room temperature. Using an electric mixer (if you don’t have a mixer, use a wooden spoon), beat butter and sugar until light and fluffy. Mix in egg yolk and essence. Stir-in sifted plain flour and baking powder to form soft dough.
Put dough into a cookie press and press shapes out onto greased baking sheets. Bake in preheated oven at 180ºC for 13 to 15 minutes or until light and golden brown.
Allow to cool on the tray for a couple of minutes before using a spatula, lightly lifting it carefully onto wire racks to cool completely.

hey irene, it’s teaspoon. what i normally do is mix the flour and baking powder, and then sift everything in one go. hope this helps :)
